This was the sweet bedding for the Sous Vide pork chops (recipe here: http://www.furaffinity.net/view/15443931/) Vrghr made tonight. The carrots, Delicata squash, and Granny Smith apple all have sweet components which complemented the chops' maple and balsamic flavors nicely.
Vrghr wanted to bring a little more kick and savoriness to the puree, to keep things from getting TOO sweet and sugary. So there are savory notes from Prepared Horseradish, Garlic, and Shallots aboard. Amaretto and Orange Juice each add some nice contrasting notes. While butter and half n half bring a silky, rich mouth feel.
This would be a very nice side dish all by itself, even without the Sous Vide chops. It is also vegetarian, but it does contain dairy.
Ingredients:
4 Carrots, peeled and chopped
1 Delicata Squash, Seeded and slice into 1/8ths (Can use butternut or acorn squash too)
1/2 Granny Smith Apple
1 Tbs minced Shallots
2 Tbs Amaretto
3 Tbs Orange Juice + 2 Tbs Orange Juice
3/4 C Milk
3 Tbs Half n Half
2 Tbs Butter
~ 1/2 C Water
1 tsp minced garlic
1 tsp prepared horseradish
1/4 tsp Salt
Dash Mace
Directions:
Note: If using Butternut or acorn squash, do not put the peel in the puree! Delicata squash has a tender enough peel to be included with the carrots.
Place the sliced squash and chopped carrots on a baking sheet
Roast at 350 until slightly browned (about 45 min - 1 hr)
Chop up the Apple
Place all remaining ingredients in a medium heavy saucepan
Cover and cook on medium heat until apples are tender
Combine apples, carrots, and squash in a food processor (or in apple saucepan with an immersion blender).
Add Half n Half, milk, and remaining 2 Tbs orange juice
Process until smooth, adding additional water (or vegetable broth) until mixture is desired thick but smooth consistency.
(Note - you may need to add more liquid if it rests on warm for a while)
