Well, all you need is one mistake and you can get in VERY big trouble. It doesn't have to be by a suiter, either; I've heard some horror stories of the way some people behave towards fursuiters (including outright attacks). The parks probably fear a major league lawsuit.
Which is still a pain for 'suiters, but sadly it's an understandable reason.
