Well you can just look at existing fiber cables, this kind of thing is used all over in high speed networking. Usually they can bend pretty far and as long as you don't kink them they work fine. Real ones are quite a bit thinner though since you don't really need a ton of material to transmit the light and don't need EM shielding unlike normal cables, so having it be this thick would probably make it less flexible.
What's good is fiber optic cabling is getting really fucking good, it's just expensive since the supremely high quality cabling has to be done by hand, and that kind of labor ain't cheap.
Linus from Linus Tech Tips recently did a video about Corning's new active thunderbolt 3 cable that uses fiber optic and it's insanely flexible since the glass they use is nearly indestructible from kinking.
In 10 or 20 years I can easily see transfer speeds of above 500Gbps to even the Terabits space in these kinds of cables at least in the enterprise space, then consumer/prosumer soon after.
