Well my workflow is pretty simple, I do it all with polygons I try to avoid the sculpture process because I feel it slow, I like to go straight to the final topology. In that way, I can speed up the entire job.
There I jump to the textures I use Substance painter to make the texture set, and then I add the rig in Blender

Me alegra saber que eres estudiante de modelado!! Y contestando tus preguntas, lo modele Usando Blender, lo texturice con Substance Painter, tiene unos 30K de polígonos creo, y si le hice rig con el addon de Riggify en blender, que trae huesos para la cara incorporados.
