This makes me wonder what some of the other offense-focused Titans are capable of - not to mention the two biggest Titans out there.

Well if you're going to make a mountain sized snake woman super soldier you better put that dense reptile muscle to good use.

Hmm I'm not interested in this titan, even if this looks impressive, but aren't autocarriers supposed to have cannons on the sides or something? I say this because this titan is right on one side of the autocarrier seen here and she doesn't seem to have a problem attacking it.

Autocarriers have guns EVERYWHERE, but they're not ALL effective against titans.
The two sides in the war were always working to counter the tactics of the other. Because of Siege Towers like ST-2020.08.18, the Severine introduced the "snub guns" seen in the comic; specifically to counter this kind of attack. Not ALL Autocarriers had them, though, because their installation required the removal of other weapon systems.

Do you plan to go deeper into how the two sides have tried to one-up each other? I feel like the way Part 1 ended was the endpoint of this arms race.

Don't expect a history book :D
There's stuff the writer needs to know and stuff the reader needs to know. I'll only add to the comic what is required to make the story satisfying.

Which is more than fair enough. It'll be fascinating to see how crazy things get by the time all is said and done.
