
A male fox witch picking thistles in the woods. I saw many of these this year (thistles, not fox witches), they grow very big! We also have lots of buddleias, these smell heavenly.

Do you know the name of the ones grown for gardens where you are?
I know cardoon and artichoke are thistles and here in Texas the wild Texas thistle has edible leaves once you trim the spines off the edge of them. I don't know if a portion of the head would be the same way it is on cardoon or artichoke.

Here there are lots of cardoon cultivars, that usually are named after the zone where they grow. Those are ENORMOUS plants, and farmer usually sell sliced stems and leaves that have already been trimmed. I love these and artichokes, but i have never tasted wild ones. I read you can eat them though, I'm tempted to steal some someday.
