All of the mainline ones (sans 15, but I watched my brother play some of it), and a few of the spinoffs like the Tactics games and even weird stuff like Ehrgeiz if that counts.
I kinda like all of the entries in their own ways, but my favorites are the Playstation era of games (7, 8, and 9), FF10 since that's the first one I beat, 5 and 6 since the worldbuilding is cool and I like the characters, and I play 14 currently.

Very refreshing to meet a fellow Final Fantasy fan who hasn't only played FF7 or FF14. I'm currently playing 3 (I'm actually at the final boss), and 1. I've played 14 myself but I fell off. I spend most of my time drawing these days. I've beaten 15 and all its DLCs as well. I want to play and beat all the main series games before I die.
I remember back when I played FF11 back in the day I was surprised at how many people I met hadn't played any other Final Fantasy game, which is a shame because I think every entry has something unique to bring to the table (FF2 being the spiritual origins of the SaGa line of games, FF5 having the fun job combo system, managing materia in FF7, getting all of the equipment skills in FF9, etc.) I try to see all the content Square's put out there over the years too like Chrono Trigger/Cross, Front Mission, the Mana games, etc.
I actually only recently got back into 14 after about 4 years (trying to find a good balance between that and art stuff :p).
Also I had fun with 3; the Four Old Men theme is one of my favorite ditties from the series.
