So I started to learn 3d modeling/sculpting
This is like, my second model attempt, don't really know what to even do with it, since Ennis requires an immense amount of fur I've kinda just stopped not knowing what do now lmao. More or less started as a reference for the horns and just, because a full body. I legit don't know what I'm doing, I just, figured out how to sculpt and popped this out.

Nice, it's looking great so far, keep it up! :D
Quick hint, you don't have to use the sculpt tool to make everything, it's much easier to use basic shapes like a sphere to make a general form, merging them together with a bollean modifier, and then using the sculpt tool to make everything pretty.
Here is a "making of" image set that i posted of how i made my dragon model a few years ago, maybe it helps : )

For the fur, what i would do is use a texture for most of the body, and then use the hair particles to make the flufier areas like the tail, back, wings, ect.

I found the scuplting extremely easy to pick up, and rather fun to do honestly. That whole retopo thing is where I'm just like "SCREAM" as I'm easily distracted when doing things tedious hah! I do have a 3rd project that I've actually looked at tutorials of what I'm doing, to make an anthro avatar that if I haven't effed up I might be able to use https://i.imgur.com/OTwL9Yp.png . Didnt sculpt it at all to attempt to not have to retopo as that looks like pure pain to do aha. The fur is mostly experimentation, I've kinda just tried a couple different technique tutorials to see what looks the most decent for the polygons. Alot of my issue really arise from not really understanding what I'm doing but somehow being able to do them lmao.
Yea, don't worry, you're not the only one who screams when it comes to retopo, i have a few models on "stand by" this moment just because i can't get myself to do it.
But it does pay off well in the end, so it's worth the pain X3
Try playing around with video game models to see how to best run the topology, and armature, and a ton of other neat tricks (that's mostly how i learned)
Some of my go to sites for models are Open3dlab, smutbase, sfmlab (you'll need to learn how to import sfm files into blender for that), or just type in google what you're searching for and add xnalara to it (xnalara is another posing program, but it's easy to import it's models into blender, you just need one addon)
