A friend of mine doesn't like coleslaw, not even the apple cider slaw I made last year, because he doesn't like mayonnaise or vinegar. He asked me if something with lemon juice might be good, so I crafted this recipe.
Ingredients for a Single Serving (oh, I used to DREAM of food what had ingredients in it when I was a Young!):
1 1/2 cups coleslaw mix
1 tablespoon lemon juice
1 tablespoon honey
1 tablespoon vegetable oil
Black pepper to taste
1. Mix the juice, honey, oil and pepper together in the bowl until well mixed.
2. Add the slaw mix, and toss gently to coat. I say "gently," because you don't want to throw bits of cabbage everywhere.
3. Eat!
This is for one serving, so you can scale the recipe up or down as you wish.
Nutritional info:
1.5 cups coleslaw mix: 25 calories
1 tbsp. honey: 60 calories
1 tbsp. oil: 120 calories

I made up a batch of the slaw to go with my fish & chips tonight. I enjoyed this a LOT. I've never been a fan of mayonnaise, so this was a terrific alternative to more traditional coleslaw dressings. The only adjustment I would make is I might go with a bit more honey next time (but that's just me). Thanks for sharing this.
