
Normally, these are called out as "Cabbage crust pizza" on YouTube, but these come with a twist. Seriously; check the various recipes out there, but remember that cabbage is BLAND.
I started doing these because I've made a MAJOR move and my new job has me traveling, sometimes up to a month at a time. Anyone knows that eating out is a treat, but if you're pulling 12-14 hour days, you don't have time to go out and eat healthy. (Seriously...there is only so much fast food, subway, or microwave White Castles one can put up with!) Luckily, there are hotels out there that have kitchenettes, and that is the life saver. As long as I have a cutting board, a frying pan with a lid, and a hot plate you too can prep decent meals!
The grocery list for this came down to this:
1 Bag Tri Color slaw
1 Box of biscuit mix (pancake mix would work just as well, and would probably go better with breakfast)
1 Dozen eggs
Sliced cheese (Cheddar, mozzarella, pepper jack...all depends on what you're doing)
Butter
Small container of olive oil
Salt
Pepper
Various Spices
BACON.
(Other items based on your concoction... you'll see below)
First, take the bag of shredded cabbage open one side and fill it half full of water. Roll the top and agitate it. Cut the corner off the bottom and let it drain.
While this is going on, go ahead and do your prep work; the dish on the right has a small Vidalia onion that's been sliced thin and caramelized. A dish of BBQ pork ribs obtained at a grocery store deli that's been parsed out, coated in the BBQ sauce of your preference, and reheated with butter and black pepper. The dish on the right is a breakfast version, so scrambled eggs, bacon crumbles (save the grease!), and turkey sausage.
Now comes the fun part! Ok...the messy part.
Really messy.
Divide the cabbage up into two bowls. Scramble two eggs with 3 Tablespoons of the biscuit/pancake mix until smooth. Add this to the cabbage and work it all together. If it's a breakfast version, then consider adding some crumbled bacon...or both...just because BACON! This is also a good time to add spices to the cabbage; a steak blend, paprika, pepper, cinnamon and sugar blend (like one would find in cinnamon toast).
Heat a skillet over medium heat with butter/oil (bacon grease for the breakfast version). Once the pan is hot, add the cabbage to it and work it into a round shape, smoothing it out as you go. Let this cook for about 4-8 minutes or until the bottom is set. Grab a plate (and some paper towels) and turn the cabbage over with the plate.
DON'T FORGET TO WIPE ANY OIL/GREASE FROM THE BOTTOM OF THE PAN BEFORE YOU PUT IT BACK ON THE BURNER!!!
Let the round cook for another 3-5 minutes, then flip again. Add your toppings, cover with cheese, and put the lid on. Go ahead and turn the heat off and let it sit for about 5 minutes before plating.
Mind you, one can even add pizza sauce, cheese and pepperoni should one desire. When I was on the road, this was 4 days worth of main course breakfast and dinner. Adding in a prepped salad, half a can of spaghetti O's, yogurt, toast (whatever goes with what you made) can make a quick and easy meal and not break the bank.

An InstaPot makes a HUGE difference in the variety of things you can cook in a hotel room. Believe me, I used to do a *lot** of cooking in my dorm at NCTAMS, and that was when I was using one of those deep fry/steam/boil pots. If you want to include fried stuff, get an air fryer, too. They really are fantastic!
