I made a big batch of batter and I have been baking these things all week
they are amazing and I am so fat
if you've ever eaten MOCHI before these have a pretty similar texture because they're made with TAPIOCA FLOUR. it's like eating gummi bread!!
gotta make these again and add some queso fresco or basil-infused olive oil or something, getting fatter just thinking about it

just fry the flour on a frying pan like if you were doing a pancake or a crêpe, but using tapioca flour
put cheese or whatever the HELL you want for the filling while frying (or not, depends on what you want for the filling) really, anything goes, since tapioca flour barely has a taste, so you can make it either a sweet dessert or a salty snack, but i really like the traditional cheese and butter
and the best thing is that since tapioca can go well with anything you can add whatever you want!! mix things up!!

You have to put a pound of tapioca flour on a cup and add water until the water fills like two centimeters, and then let the water and the flour dissolve for a day. then "dry" the pasta carefully with a clean cloth, or either sieve it slowly, in small portions and not all at once
Crumble the pasta up with your hands and then just splat it in a frying pan and model it as a pancake and add stuff to fry with it! or not, you can add after the pasta is done, depends on what you're gonna fill it with!! YOUR CHOICE!!
be careful not to fry it for too long, you have to get the tortilla off while the pasta is still white, don't let it darken much!
