Non-dairy, because I didn't want to add extra fat with cream or milk, nyah.
Ingredients:
About a pound of chicken breast tenderloins, about 7 of them
2 tbsp. olive oil
Sliced onion
Sliced mushrooms
Just under 1/3 Cup of Marsala
Salt
Pepper
Steps!
1. Put about a tablespoon of oil in a frying pan over medium heat, and heat it until it shimmers.
2. Put the chicken in, season with salt and pepper.
3. Turn the chicken over and keep turning it and moving it around until it's browned and cooked through.
4. Take the chicken out and put it on a plate while you get the sauce ready.
5. Add the other tablespoon of oil, and drop the heat to medium-low.
6. Put the onions and mushrooms in; saute until they start to soften and brown.
7. Deglaze the pan with the Marsala, stirring; bring the wine to a boil.
8. Put the chicken and any juices back into the pan; coat the chicken with the sauce as you heat the tenderloins back up.
9. Serve with whatever sides you wish.
10. DEVOUR!
Verdict: Overall, I was very pleased with this, so I give it an A. It would be A+, but I had to clean the stovetop.
