From the kitchen of
chillymouse comes these delightful and fun waffles.
Fish waffles! If you want to make this, you'll need the following:
*Pancake batter
*1 Egg
*1/2 C Water
*2 tbsp Sugar
*Sweetened Azuki red bean paste
*Taiyaki pan (they usually run about $25, and Ebay and Amazon typically carry them)
*Cooking pan spray
I used the mixing proportions on my pancake/waffle batter box. One package called for one egg and a half cup of water. I beat the egg in with the water. Two table spoons of sugar were stired into the batter powder.
Using a wisk, slowly pour the liquid mixture into your batter powder and sugar mix and wisk. This will help cut down on lumps. Continue to wisk until thoroughly blended.
Heat one side of the pan using high heat and pour a small amount of the batter into the mold. This will help prevent your filling from bleeding out of your fish. When it is finished bubbling through, remove from the head and add a proportial sized filling of your sweetened azuki ontop of the batter. Make sure your filling isn't sticking up too high, or it will poke through the other side when cooked. Pour batter over your filling, and make sure the entire mold will be filled. Do not over fill it, or it will ooze out of your pan.
Turn your burner down to a medium heat, and continue to cook on the side that is down for another minute. Flip your pan afterward and let it sit for a minute or two. Periodically check both sides, and flip as needed.
It's recommended to remove the taiyaki using a bamboo skewer. Trim the extra cooked batter away from your taiyaki. When finished, go nom on some fish waffles.
Allergy warning – recipe contains dairy products
