The EXIF fields in the JPEG format include a flag for 'Orientation' which can have one of eight values, depending on which is the main corner and which way is which, and different applications handle the flag differently. If the camera set the flag, and you stripped out all the EXIF fields (to remove any identifying information) then the image could end up being shown in the wrong orientation.
It's one of those really annoying things because, as noted, not every program reads the EXIF tags the same way, so things can look just fine in one application and show up backwards in a different one.
