Some time ago, I posted a journal which asked the question "if you could have one dish (any dish in the world) to eat for the rest of your life ... What would it be?" Well, one Mod from FACCC said bacon wrapped scallops. So to get back into the posting and cooking, I present my scallops with bacon and a spicy mayo sauce. Simple, tasty, and so pleasing to the eyes.
Depending on where you live and the season, scallops can get a bit pricey per pound, but I find the smaller ones are sweeter and you get a bit more for your buck. Also you don't want to over cook your scallops. If you prefer more crispy bacon, you can cook it in a pan slightly so that it's cooked but pliable to wrap around the scallops before this.
Enough talk, and more nomming.
Ingredients:
1 1/2 pound small to large scallops
1/2 pound thin-sliced BACON
Extra-virgin olive oil
Sea salt and freshly ground black pepper
1 cup good quality mayonnaise (check ingredients to be sure it's GF)
1/4 c Sriracha Hot Chili Paste
1 lime, juiced
1 tbsp chopped cilantro
Directions:
Preheat the broiler. Wrap each scallop in a piece of bacon and secure it with a toothpick.
Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper.
Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once about mid way through.
Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use.
Remove the toothpick or use to dip in the sauce.
