Interesting observation. I hadn't quite thought of that before.
I think one of the other things is leg length. Like a cat or dog doesn't have much of an 'L' but since their legs are tall enough they pull it off better than a mouse or ferret does.
Cervelet manages to pull it off with lizards. Normally that a body type that doesn't really look right for me, and makes a different body type when 'taured'. But he tends to make them long legged and they look like they're crouching all the time so maybe that's why it looks like it works to me.

I love that you're putting a lot of thought into this. I think these are such interesting concepts!
"L-shaped" animals are kind of curious because the upper "L" part ends up being the neck kind of like your alpaca/llama example. So you'd have to add an extra torso there as well, which would elongate their upper bodies.
Birds are interesting because anthropomorphizing them leads to challenges about how to deal with wings, or bird arms. You seem to have gone the no-bird-wing route. x3

I've encountered a couple human'taurs that worked. The ability to be ambiguous about the front legs ending in feet or in hands can be fun. But it does take great skill on the artist's part to have it all flow together.
