Ah yes, to look authentic, it must be as staged as possible. It feels like it's related to what I've heard of as "the coconut effect"; where people perceptions of what's authentic have become so skewed that the majority won't accept the real deal for what it is.
And you have Clem kinda doing a double negative bit there, which is interesting; she doesn't want to see the menu ahead of time to already know what she'll get because "reading the menu at the counter makes it feel real". I mean, at that point, it kinda actually is real. Sure, you wouldn't be at the food truck were it not for a favor called in, but if you're otherwise going in blind to the menu, the reading and ordering are at that point actually genuine, so it's not feeling real, it pretty much is real. And yet to her, it's all a carefully self written script.
Can't wait to see her carefully manufactured façade give way to genuine pleasure about how good the food is.
