Ingredients:
Lamb Loin
Olive oil
Duxelles
Himalayan rock salt
Butcher's Twine
Fresh rosemary
Fresh cracked black pepper
Minced Garlic
Method:
Preheat oven to 400F and set your rack to the middle of the oven.
Lay out on a flat surface and butterfly the loin, patting both sides dry. Using a mallet, pound the lamb to about a quarter inch thick.
Rub the inside with olive oil, then spread a thin layer of duxelle on the surface. sprinkle a pinch of salt over the mixture and begin rolling the loin tightly around the filling. Tie it with butcher's twine to ensure it doesn't unroll during roasting.
Rub the outside with olive oil and season with a small pinch of salt and pepper. Scatter a small amount of rosemary leaves and minced garlic over the top of the roast, then place in a small roasting pan. Cover and roast, either with a lid or tin foil. Roast, checking the internal temperature at regular intervals (I recommend every fifteen minutes but play it by ear) until it reaches 150F.
Remove from oven and cover in tin foil, shiny side down. Allow the meat to rest for five minutes before serving.
