Another pumpkin creation! XP I love pumpkins ^^
Recipe:
Ingredients:
1 roaster chicken
1 yellow pepper, 1" pieces
1 red pepper, 1' pieces
1 red onion, cut into wedges
1 medium sweet or pie pumpkin, large dice
Juice and zest of one orange
1 lime
2 tbsp of equal parts:
cinnamon, salt, cayenne, black pepper, thyme, all spice.
2tbsp brown sugar
2cups chicken stock
salt/pepper to taste
Toss the vegetables with the orange zest and half the orange juice to coat. Place vegetables into a roasting pan. Truss the chicken and rub on the seasoning. You may use some butter or shortening to pr-baste the chicken. Place the chicken on top of the vegetables and place in the oven at 350F. Baste several times during cooking and remove when an internal temp of 165F is reached. Set the chicken aside, remove the vegetables, and place the roasting pan over medium high heat. Deglaze with the chicken stock and reduce until nappe. You may puree some of the pumpkin pieces and add them to the sauce to thicken if necessary.
Separate the pumpkin from the rest of the vegetables and mash the pumpkin. Add the brown sugar and season to taste.
