Egg Cups
Makes 6 servings
Preheat oven to 375f
1 ½ packages of ready-made pie crust (3 crusts)
Cut pie crust into 7” rounds (you’ll need to re-roll and cut second one from the crust)
Form crust over a glass to fit into a 6 cup, large muffin tin and place crust in tin leaving the sides up
Use a fork to pierce the bottom of the cup several times
Add 1 Tbsp. of crumbled bacon in bottom
Add 1 Tbsp. of chopped green onion
Add 1 Tbsp. of grated cheese
Crack one egg into cup and break yolk
Add another 1 Tbsp. of crated cheese on the top
Season to taste
Crimp crust on 4 corners leaving the top open to vent
Bake at 375f for 35 Min.
Cool for 5 Min. and remove from muffin tin
