Cinnamon-butterscotch cornbread muffins
They say “nothing says love like something fresh from the oven” and no truer words were said about my latest gem of a recipe inspired by Toby fox’s hit indie game “Undertale”.
Here’s what you need:
2 cups milk
1+1/2 cups cornmeal
2 eggs
1/3 cup melted butter
1tsp vanilla
1 cup brown sugar
2+1/2 cups all-purpose flour
1/2tsp baking soda
1/4tsp salt
2tsp baking powder
2tsp cinnamon
1 small bag of butterscotch chips
Here’s how to make it:
1-preheat oven to 400f
2-combine milk and cornmeal together in a sturdy bowl
3-mix together eggs+butter+vanilla then add to corn/milk mixture
4-stir in sugar and flour with remaining dry ingredients, then add to corn/milk mixture until all ingredients are fully mixed together
5-fill into a well-greased muffin pan (1 spoon for a base then add some butterscotch chips, then another spoon on top with more chips afterwards)
6-bake for 20-25 minutes and let cool for 10-15 minutes
7-Enjoy!
