All the pumpkin varieties are edible. Very, very much so! The blue pumpkins are really nice to eat too, if you find the right variety they even have blue-greenish seeds. *grin*
Every species of pumpkin has a different degree of tastiness. Some are more lightly flavored while others are more bold, sweeter, or what-have-you. :)
