Late last year, on a whim, I bought a small jar of za'atar spice blend. I finally decided to use it, so here we go.
Turkey Meatloaf
2 pounds ground turkey
3 tablespoons za'atar seasoning blend
1 can diced tomatoes seasoned with basil, garlic and oregano, drained
1 tablespoon honey ginger white balsamic vinegar (obtained from The Treasured Olive, a shop here in town that sells artisanal infused balsamic vinegar and olive oil)
Seasoned bread crumbs (less than a quarter-cup)
1. Combine all ingredients (reserving 1 tbsp za'atar), form into a loaf and place on a roasting pan, sprinkle the last tablespoonful of za'atar on the loaf.
2. Bake at 350F for 1 hour.
Verdict: Very tasty. The za'atar and the balsamic vinegar give the turkey a lot of flavor. For diet purposes, I estimate that a 4-ounce portion will be 200 calories.
