As of current all I can tell you is that there's 4 dojos across the island, almost like gyms honestly.
The core one- which Kaelee has is the first dojo. Located in the city, so Pokemon can't go all out on attack, they have to keep their powers dialed down to prevent any disaters.
The other 3 are more likely out in less-populated areas, the last dojo being on one of the smaller islands circling Luani Island.
Each dojo represents a for of Zygarde.
The Core is the first-
10% for doggo
50% for snake
And 100% is where you can go absolutely crazy, no holding back.
And glad ya like the bikini too ahuhu xD
