This is a recipe I made from scratch that I like to call Stir fry Salad. It's quick, easy but most importantly, delicious ~
Start by dicing a medium yellow onion along with 4-5 cloves of garlic and place in a separate bowl as you prepare the other vegetables. Chop up half a head of cabbage into bite size pieces and place in a large bowl. Next, take one medium broccoli crown and cut the top off using a smaller knife. Cut two carrots and two jalapenos diagonally and place in a separate bowl. Finally, chop 3 green onions into a quarter of an inch and dice 1/4 of a cilantro bunch, placing them in as separate bowl. Even though this is an Asian inspired dish, I thought the cilantro would give it a bit of a Hispanic twist.
With your vegetables ready, you can move on to making your sauce. In a standard mixing bowl, whisk together 1/4 cups of vegetable broth, 1 table spoon of soy sauce, 3 table spoons of oyster sauce, a tea spoon of rice vinegar, a tea spoon of corn starch and 1/2 teaspoon of any type of seasoning you'd like. I'm using Chinese five spice.
Now that everything is ready to go, you can move onto stir frying. Place a 12 inch wok or skillet on your stove top and leave it on high heat until you see a few wisps of smoke. About 2-3 minutes. Drizzle a tablespoon of olive oil in your pan, add your onions and garlic and stir fry until they're brown and caramelized. About 1 minute. Next, add another tablespoon of olive oil and add your cabbage about 1/3 of said amount at a time because if you add all the cabbage at once, it's gonna overflow the pan and you're gonna make a big mess so just add 1/3 of cabbage and cook until it's wilted. This should take a out 1-2 minutes. Add the next 1/3 of cabbage and repeat the process until it's used up. When your cabbage is wilted, add another tablespoon of olive oil and add your broccoli, carrots and jalapenos and stir fry for 10 minutes until all your vegetables are bright and caramelized.
Once everything is ready, add your sauce. FYI make sure you give it a good stir before adding because the corn starch has a tendency to clump up at the bottom. Stir fry until the sauce has thickened and soaked in with your vegetables. This will take about 5-6 minutes. Once the sauce has thickened, the salad is ready. As you're about ready to serve, garnish with the green onions and cilantro and enjoy.
This salad has a great balance of salty and sweet, the jalapenos give the dish a spicy kick as well as the cilantro giving it a refreshing wisp in your mouth.
