yeah, dunno what else to call it.
Went to the store the other day after getting back from the Florida place.
Couldn't find the instant bowls of bean thread noodles i was looking for.
Figured I'd pick up some random stuff to make.
Was pleasantly surprised.
Amounts are adjustable as always. The recipe I put down here makes enough for one (slightly large) bowl.
~~~INGREDIENTS~~~
Couple handfuls of stir-fry rice noodles
Water or beef broth for cooking
Beef bouillon (unless you're using broth)
Garlic powder
Parsley
Handful of chopped onion (any size and type)
Handful of chopped mushrooms (i used portabella)
Handful or 2 of Ground Beef
Part of a chipotle (or a whole one) chopped
~~~PROCEDURE~~~
Put enough water or broth in a smallish saucepan to cover however many noodles you're using and bring it to a boil. If you're using water, add the bouillion and garlic powder. Remember: this stuff is all according to taste, so add as much as you want.
Throw in the noodles and put the burner on a low simmer while cooking everything else.
Throw in the parsley if you want and mix it in.
Make sure the noodles are no longer boiling. That part's important. Just keep them at a low simmer until the other stuff's ready.
Chop the onions and mushrooms (if you haven't already) and cook them in a skillet on low or mediumish heat for a few minutes.
Chop the chipotle into small pieces. You can use a small part of one or a whole one depending on how much heat/delicious chipotle flavor you want.
Grab a handful or so of ground beef and break it up into the skillet with the onions and mushrooms. Add the chipotles with it.
While the beef is cooking, chop/mash it with the spatula to break it into tiny pieces. Cook until the beef is browned.
Grab a bowl or a plate.
Put it all together, and what does it spell? :3c
