Sunday dinners are often best when they are in the company of friends, family, and especially desserts! Feeling a bit adventurous, the kitchens of Full Moon Cuisine came up with an easy, tasty treat that can be quite versatile. Here's what you'll need for this cake:
- 3/4 cups butter (1.5 sticks)
- 1 cup granulated sugar
- 2 large eggs
- 1 1/2 cups AP flour
- 1 tsp baking powder
- 1/2 cup milk
- 1 tsp vanilla extract
- Pinch of Kosher salt
- 1/2 cup light brown sugar (firmly packed)
- 1 cup blackberries (frozen will work just fine)
- 2 Gala apples, peeled and sliced into 1/4" slices
- 1/8 cup honey (enough to lightly drizzle)
(Optional glaze)
- 1 lemon
- 1/2 cup powdered sugar
To begin, preheat your oven to 350 F. In a large bowl, mix the sugar and 1 cup (1 stick) of butter together until it has the consistency of wet sand. Next, mix in one egg at a time. In a separate bowl combine your flour, salt, and baking powder. Slowly incorporate the dry ingredients into the wet (try to do it in thirds) and alternate in the dry with the 1/2 cup of milk. At the end, add the vanilla extract and set the bowl aside.
In a 9" cake pan (nonstick is your friend!), melt 1/2 stick of butter, swirling it around the pan. Next, sprinkle over the brown sugar and drizzle the honey over the mix. Now, arrange your apple slices in a nice pattern and sprinkle the blackberries over the apple slices. Using a spatula, spoon the batter over the top of the fruit (it's a thick batter, so do it in batches). Make sure to try and cover all of the fruit with the batter, smoothing out once you have the last bits in the pan. Place into the middle of the top rack of your oven atop a sheet pan (sometimes the juices from the fruit/butter can boil out and make your oven smokey). Bake for 45-50 minutes, until you can poke a toothpick into the middle of the cake and have it come out clean.
Let the cake cool for 15 minutes on a wire rack, then carefully run a knife around the edge to loosen, place a plate over the cake, and flip it over to have it pop out onto the serving plate. Once the cake has sufficiently cooled, you can even add a simple lemon glaze by combining 1/2 cup powdered sugar and the juice of one lemon, gently brushing it over the top.
This cake is a great after-dinner treat, an interesting party snack, and a great breakfast item. Cake for breakfast, you ask? Well, why not? Ultimately, doesn't being an adult mean that you can decide that the best time for dessert... is whenever the hell you want?
