This is a very nice and simple side dish although I had it for my main dinner tonight. You can of course customise this and add other quick cooking veg like thin sliced carrot, broccoli etc but for my purposes tonight I had the bok choy on its own.
1 tspn Coconut oil
10 Bok Choy or equivalent Pak Choy
Salt and pepper
1 tsp Sugar (honey or maple syrup works just as well)
100g or good chunk of Danish feta
Clean the Bok Choy very well, roughly chop the leafy part and thinly slither and or dice the stems. Drop the Bok Choy into a fry pan with a little Coconut oil, pepper and salt. Not too much salt as you will be serving this with feta and that will add a certain amount of saltiness to the dish. Stir it around at least once. It will only take about ten minutes to wilt and soften the Bok Choy. Remove from pan and sprinkle with a little sugar, let the residual heat melt the sugar and give it a little stir in.
At this point you can let it cool off.
I like it cold but if you desire you can make this a warm salad.
Either way serve it with some Danish Feta flaked on top.
The idea of the sugar is to balance the bitterness of the bok choy and the saltiness of the feta. It also helps create a small amount of sauce.
Simple but tasty.
