They grow in a ring because it is the edge (aka frontier) of the mycelium under the surface of the sod. The mushrooms you see are the fruiting bodies that result when the two (or more) colonies are triggered to reproduce through sexual reproduction. The mushroom we know of, therefore, is a symbol of sex and fertility.

And they're so good to eat! (well, maybe not that one, though it does look like it could be the same as the one you buy in the store)
