That’s what our family calls this. Inexpensive, single pot recipe. As made below, it’s also gluten free. Easy to scale-up. Very popular with scout leaders.
Ingredients:
Two packets, Carolina brand yellow rice
1 package (12-14oz) precooked sausage such as Johnsonville brand Bun-length brats
1 lb bag frozen mixed vegetables
3 1/3 cups water
Pour water into a 3 qt pan. Add rice. Add vegetables. Cut your sausage into small wheels and add. Cover. Bring to a boil on high. Lower your temp between low and medium and let simmer until water is absorbed (about 20 minutes). Enjoy.
Serves four. Need to serve just two, cut the ingredients in half. Need to serve more people? Scale up as necessary. You can use any pre-cooked sausage for this: hot sausage, kielbasa, even hot dogs if that’s all you have on hand. If you have raw sausage, you’ll need to cook it off before throwing it in the pot with the rest of the ingredients.

The squirrels have decided to stay masked until further notice as my wife, Rev. Patterpaw, is a hospital chaplain in a facility where they continue to treat Covid patients.
