Rykart is a pretty fun boss, at least for me. However, the blade of "thanks for blocking" is Malenia refering.
Blocking keeps you alive, but actually helps them to keep on fighting.. So yes, potentially, if you had a item that regenerates your hp eternally, you could fight them eternally.
