In Australia we have a breakfast cereal staple called Weet-Bix. I don’t know the availability in other countries but I’ve been told it is sometimes seen in both America and England at least.
Ingredients
10 Crushed Weet-bix
200g Sweetened Condensed Milk (just over ½ of a 395g tin)
1 cup Mixed Dried Fruit and/or Nuts (I used sultanas, dates, apple and glazed ginger)
125g Unsalted Butter
1 tbsp Cocoa
½ cup Chocolate Chips or small buttons
½ cup Shedded (Desicated) Coconut
Method
1. Melt butter, add condensed milk and cocoa and heat gently until combined.
2. Remove from heat and add chopped fruit and nuts, coconut and crushed Weet-Bix (just crumble the Weet-Bix in your hand). Stir well and press into a flat tin – 28cm x 18cm is an ideal size.
3. When cool, ice with lemon icing (see below).
Lemon Icing
Ingredients
1tbsp butter melted
1 ½ cups icing sugar
Juice from ½ a lemon
1 or 2 drops of yellow colouring if desired
Method
1. Combine well and spread over the slice then decorate with extra chocolate chips if desired.
Once set cut into bite sized pieces and enjoy. Ideally keep refrigerated.
