After watching DEFEND DINGO youtube video on stuffed peppers.
https://www.youtube.com/watch?v=v3clyBeFQ3s
I decided to try it but tweek it a little.
Ingredients:
3 green bell peppers
1 spanish onion
3 Scotch bonnet pepper
4 cloves of garlic
6 mushrooms
3 cans of six-bean blend
1 500 ml of sour cream
half a bag of tex mex cheese.
spices:(add to taste)
Black pepper
Himalayan pink salt
Tex mix spice mix
Old bay
Curry power
Turmeric power
Directions:
I cooked this on my charcoal BBQ at about 330 degrees. Cut the tops of the green peppers off and then chop them up and add then to a big mixing bowl. Next cut up the mushrooms, onion, Scotch bonnet pepper and the garlic and add them into the bowl. Add the spices and all of the sour cream in to the bowl and mix well. Next fill the peppers up with the mixture and cover with as much cheese as you like. (I like a lot of cheese) cover and let cook until every thing is cooked and the cheese is melted. (if you have a lot of the mixture left over then fill up a bread pan and cover with cheese and cook withe the peppers.)
