Truly an Italian specialty from skyeryoushuu !

so here's the recipe for the Sausage / Beef Farfalle with Kale.
You will need to dice:
1 Shallot
1/2 Red Onion
1/2 Yellow or Sweet Onion
1/2 cup Celery, cut from the top of the stalk ( stalk being the whole bunch and not a single rib) with the leaves
4-5 cloves of garlic.
1/ lb diced button mushrooms / or Crimini mushrooms
After that is diced, you'll want to drop that into a prepared pain with enough olive oil to cover the bottom of a heavy skillet or dutch oven. Sweat that down then add
a hand full of Italian seasoning (or fresh herbs if you prefer - so basil , oregano, thyme, marjoram parsley rosemary and tarragon)
4 hot Italian sausages or if you prefer, Sweet Italian sausages - (but you'll need to add a palm full of red pepper flake later later in the process, to taste, of course. or mix sweet and hot to your pref)
3/4 pound 80/20 lean ground beef
add the meat and immediately follow with a crack of black pepper and a turn of salt- ( i uses Himalayan (pink salt))
while that's cooking down you'll want to grab and dice-
1/2 cup sundried tomatoes
1 can fire roasted diced tomatoes (or roast them yourself)
ass one can of tomato paste and one can of tomato sauce for the gravy. - or a jar of any simple marinara sauce will do
Lastly, add a cup of stock (chicken or beef) and 14 cup drinkable red wine. ( non of that god awful cooking wine!)
Remove the ribs from some kale and shred it , add it into the sauce - simmer-
cook 1/2 lb of Farfalle (Bow tie Pasta) reserve 1/2 cup of the pasta cooking liquid and add to sauce.
Season with salt pepper to taste. add a dash of olive oil to finis the sauce. if sauce is too acidic, add a sprinkle of sugar/ a drizzle of Agave nectar to bring down he acidity / brighten the sauce.
Combine.
Top with shredded Parmesan or a Parmesan blend
garnish with a leaf of Fresh Kale.
Serve . Enjoy
