I didn't get good pics of the final product, but I made a sauteed mushroom + onion scramble that turned out really good.
Just calling this a generic scramble since it's something you can mess around with a lot.
Quick recipe of the full thing (some things are estimates, marked with a * )

5 Whole sliced mushrooms (I used generic button)
Half a medium onion (in this case Vidalia)
3 eggs
1/5th cup butter (third of a stick of butter)*
2 Tablespoons Soy sauce*
+Non-vegetarian option:
2-3 strips of bacon
Heat pan on medium heat - enough to brown butter without burning.
Add the butter and soy sauce and cook until butter is browned.
Add mushrooms.
Cook mushrooms until they look brown along the edges, then add onions.
Cook onions until translucent.
-At this point you can remove the mushrooms and onions and add separately later, or add eggs and cook together but this runs the risk of burning.
At this point you're basically done! I added a ton of black pepper and some greens for texture.
+Non-vegetarian version - cook 2-3 strips of bacon after removing the sauteed onions and mushrooms to your desired taste. Recipe stays mostly the same but DON'T DRAIN when the bacon is done, use the bacon grease to cook the eggs in. :3
