Another quick one that I've been dying to do. This is "healthier" version than a lot of the poppers you can get at restaurants (or Goddess forbid, out of a box at the store). Also, since you're working with Jalapenos, remember to wash your hands with soap and water after handling them!
Baked Jalapeno Poppers
Ingredients
10 Plump Jalapenos; cut in half, seeded and cored (WASH YER PAWS!)
1/4 Cup shredded White Cheddar
1/4 Cup shredded Parmesan
2 – 8 oz containers Cream cheese with chives
1 Tbsp fresh Basil, rolled and chopped finely
1 Tsp minced garlic
Sweet paprika
BACON*
Instructions:
Cut the stem from the jalapenos, then halve – core and seed.
Preheat your oven to 400F (205C).
Line a pan with aluminum foil and place a large wire rack in the center. Spray the rack with cooking spray.
Mix the Cheddar, Parmesan, cream cheese, Basil, and garlic in a bowl.
Stuff each jalapeno with about a tablespoon of the mixture and dust with paprika.
(At this point you have the option of wrapping this in a strip of bacon.)
Place the finished popper on the wire rack and place in the oven for 15 minutes (without bacon) or 20-25 minutes (with bacon).
The ingredients can be modified, with say regular cream cheese, and other cheese. I've done some with a pepper jack and sharp cheddar blend with cumin and chipotle powder, so give it a whirl!
*Not optional when serving to pangolins :p
