Snorlax is fat because
1.) he eats Plump Beans
2.) The anime shows Snorlax to have a diet that is both excessive and unbalanced.
3.) (The best one.) Snorlax's appearance and behavior of constantly eating and sleeping were directly inspired by Game Freak planner Kōji Nishino.
What Snorlax eats, the anime, and (of course) Kirby (Kōji Nishino's nickname.) are why Snorlax is fat.
