I cheated the crust because I was lazy, but they're a cinch to make too.
Yields two quiches (just halve the recipe for a single):
1 pack pre-made 8 inch pie crusts (Mine had two)
12 medium eggs.
1 cup heavy cream.
16 oz lean bacon. Uncured/Salted. I suppose you could use pepper-bacon, but add less pepper to the recipe. Smoked bacon will make the quiche taste like wood.
2 yellow onions, sliced.
8 oz mushrooms, sliced. (Optional)
6 oz gruyere, grated.
1 tablespoon thyme (I used fresh; use less if dried.)
Salt / Pepper to taste (1/4 tbsp salt, 1/2 tbsp pepper is about what I used.)
Prep:
Preheat oven to 375.
In cast iron skillet brown bacon and set aside, (I patted the bacon down with paper towels to get off all the extra fat after cooking.)
Drain excess fat from pan, set heat to medium/medium-low, add onions and salt, cook until translucent, add mushrooms, continue cooking until mushrooms are soft, remove from heat. (This step takes a while, finish other prep in the meantime)
While the onions are cooking, beat eggs and heavy cream, add grated cheese, pepper, and thyme to eggs at this point. Whisk, or use a blender, until consistency is even.
Assembly:
Halve chopped bacon and line bottom of pie crusts.
Layer cooked onion/mushroom evenly over that.
Finally add egg mixture over top, split the batch evenly between the two pans and it should come up right around where you see in the picture in the pie crust.
Bake in oven for 30 minutes, start checking it around 25, you're looking for a golden crust and for the quiche to look firm in the center when lifted. You can use a knife to poke the center, if it pulls out without any uncooked egg on it, it's ready. Should take no longer than 35 minutes.
Pull from oven, cool for 15 minutes, slice and serve.
