This recipe has always been kind of vague in my family but I will try to put it into semi-accurate amounts.
Ingredients:
- Sweet Potatoes [I used about 7]
- Cinnamon
- Corn Syrup [I used about half a litre but just have the whole bottle ready]
- Brown Sugar [I used about half a kg]
Instructions:
- Preheat oven to 350*
- Boil whole sweet potatoes in a large pot.
- To test for doneness, push a fork into the potatoes, it should easily push in about 1/4 - 1/2 an inch
- Empty all water out of the pot and fill it with cold water, then put the potatoes in the cold water
- Let them sit in the water for about 5 minutes, when you can hold them in your hand without getting burned, you can peel them.
- Cut off both ends of the potatoes and peel with the edge of a fork. Be gentle!! It does not take a lot of pressure to peel the skin off.
- Butter the bottom and sides of a large baking pan [this is important or you will never be able to scoop them out!!
- Sprinkle cinnamon and then brown sugar all over the bottom.
- Cut the sweet potatoes into chunks ~2 inches wide and place them in the pan, cut side up. If you don't have enough room for some pieces, it's okay to put them on their side.
- Sprinkle cinnamon all over the sweet potatoes
- COVER!! Them in brown sugar! Be generous!!
- Pour a ton of corn syrup all over them, be generous here too!!
- Sprinkle cinnamon and brown sugar on top of the gloopy mess
- Put in oven for ~2 hours. Watch for boiling over/bubbling! The objective is to get all the brown sugar melted into the corn syrup so when you see this, they are done.
- When they are done, take them out very carefully. If you spill it on yourself, your arms will become skeletons because you're messing with molten lava.
- Let sit until the bubbling has gone down
