A wonderfully tasty Vegan dish from the kitchens of

INGREDIENTS:
1LB. package of Extra-Firm Tofu
Canola oil (approximately a Tablespoon -- for cooking)
1 T. Sea Salt
1 tsp. dried oregano (as finely crushed as possible)
1/2 - 1 tsp. Fresh-ground Black Pepper
1/2 tsp. Ground cumin
1/2 tsp. Dried parsley (finely crushed)
Canola oil (approximately a tablespoon, for cooking)
2 T. Minced Garlic
1 C. Roughly Chopped Onion
1 Medium tomato (Cut into rough, though mostly even, wedges)
2 tsp. Sea Salt
1/2 tsp Fresh-Ground Black Pepper.
1 T. Vegannaise (Vegan Mayonnaise)
2 T. Simple hummus.
Vegan pitas (for serving)
Baby Spinach Leaves (for serving)
PREPARATION INSTRUCTIONS:
Drain your tofu and pat it dry with a paper towel if necessary. Cut the tofu into small planks about 2" x 1" in size. Place the pieces in a deep bowl of adequate depth, pour the first measurement of oil onto them and stir gently to coat. Thoroughly combine the next 5 ingredients in a small dish, and season the tofu with them, and stir to coat. Then, heat a wok or skillet over high heat, once the temperature has been reached in the pan sear the tofu for at least 45 seconds on each side, or long enough to form a golden-brown skin on the majority of each piece of tofu. When the tofu has achieved its coloration, empty the tofu to a bowl or plate to be set aside.
Then, add the second measurement of oil to the pan, along with the garlic. Allow the garlic to infuse with the oil by cooking it over medium heat for about a minute... Then, add the onion, tomato, salt, and pepper to the pan, and cook over high heat for 4 minutes while constantly stirring. Stir in the vegan mayonnaise and cook for a minute. At the end of cooking, stir in the hummus.
The filling is to be served hot, in a freshly toasted pita, lined with a green of your choice... (I used baby spinach)
