
I think I might have over estimated how many peppers would fill a 1 gallon jug after being mostly blended.
I only used roughly half of what I bought last Sunday. On the upside though I ordered a second 1 gallon fermenting jug
and I'm already working on another sauce recipe.

you dont have to ferment if you dont want to.
a lot of people, including the other hot sauce bunny here on FA,
DarkBunnySauces cook their sauces which makes it go much much MUCH quicker lol.
However, a sauce like this one i'm putting together, well, the color is one of the main things I want, cooking it will make it a brownish color, a ferment will darken it some but it will still be orange.
in the long run bot fermenting and cooking achieve the same outcome, it stabilizes the ingredients preventing it from spoiling for a while, a year maybe if not opened.
BUT..............in my opinion, a ferment draws more flavor out of the peppers and spices and.....other things in the sauce.
Sure, it takes a lot longer but I honestly think the way to go for hot sauces is to ferment. All the big names in the hot sauce world, Tobasco, Franks, Siracha and others are all fermented, and they are all on the top of the mountain of sauces available.
I understand this bun more then likely wont ever get on that mountain, but i'm having fun anyway, even if I only sell a few bottles occasionally to a friend or two, seeing people enjoy it makes it worth it.

it's usually a minimum of 2 weeks for a proper fermentation.
So far I have only done up to 2 weeks but there are some people that leave them for several months.
I dont see the point to leaving it for longer because usually after the 2 week mark the bacteria that causes the fermentation is dead making it pretty pointless to go longer.

wellllll. it could be 3 or 4 months if I add brewers yeast but I dont want to make alcohol lol
