The warthogs are almost exclusively in charge of dealing with the handling, disposing and clearing trash. Also they work to make certain the sewers do not back up or fail due to neglect. They are also responsible for maintaining the pits outside the city where sewer flow ends up. When a pit fills up the flow is diverted to another pit and the full pit is allowed to sit and compost for a few years. Then the contents are laid out in sun and dried. This is turned into fertilizer for farms in the immediate area around the bay. They also make dung bricks which are dried and sold as fuel in the city.
One of the reasons the warthogs hold this position in the city is the fact they have iron constitutions that makes them very resistant to disease. This why some have also decided to pursue careers in medicine. Funny extremes.
Now most folks are very grateful for the services they perform, but still most folks really don't like to share space in a tea or coffee house with someone who reeks of biology. Nor do they want to have the remains of their work soiling up the public baths. But the warthogs do not want to be shunned like pariahs or tracking their work into their homes. And these weren't some low grade, cheap, substandard facilities! No, no no. In honor for the services, sacrifices, commitment to serving the Sultan and Andur the warthogs got a facility second only to the Sultan's own baths for quality materials and finish. Its not as swanky on the outside but very nice on the inside. So after many hours of slogging through the "output" of their fellow inhabitants they have a nice place to unwind.

Eggs are fairly resilient, so drying pits would likely have to be spread ultra thin. Water is a typical medium, so anything like rice growing would yield healthy parasites. The aqueduct probably wouldn't bring anything in, and the existing populace would have figured out the best methods to keep nasty stuff at a minimum, but any visitors that don't know or don't follow those methods could cause an explosion of anything they bring with them.
Fortunately the water lines and the sewers are not too close to each other. However I was wondering about the cisterns. I assume there would have to be some fairly regular cleaning both the public and private versions. Question. Are you involved with water treatment, food safety, sewage treatment? I'm curious.
If you want some basic low tech cisterns, try looking up info on island living. I got to roam an island over the summer here in Pudget Sound. Only a few of the San Juan Islands have ferry service and everything else is private boat and water taxi service. Most people have a water tower and they bring their own fresh water in. I never got to ask how they kept it all sanitary.
Andur seems to have a caste system based on species. It makes sense given that some species are simply better at certain things than others and some simply develop a monopoly on some skills and trades over time, but I'm also guessing that around this point you're seeing some divergence, with some species in trades outside of what they traditionally were in, with varying degrees of social resistance.
