Now that my cherry tomatoes and cucumbers are starting to really come in, time to do something with them!
Ingredients:
1 long spiky cucumber (all you need to do is give it a good scrub with water and the spiky bits come off)
Good handful of fresh cherry tomatoes (or use the regular kind, sliced)
5-6 mint leaves, chopped
lemon pepper + low sodium salt (it exists, trust me)
1 teaspoon garlic powder
2 - 3 tablespoons olive oil
2 tablespoons balsamic vinegar
Just slice up your cucumber (you dont need to eat the ends), remove the green stems from the tomatoes, throw it all into a bowl, mix with olive oil, vinegar and your spices, and let chill in your fridge until time to serve!
