I looked this up a while ago. Apparently, it's a case of a 2000-year old telephone game.
The cave in which Jesus was buried was represented as with an egg, being linked to life. Rabbits are symbols of fertility and birth and such, and were linked with spring for this reason. And they eventually crossed over unto each other.
Or some such thing. I don't precisely remember the details of this, but it was supposibly something like that.
But then again, the fact that Christmas is now about a fat guy in a red suit, where as it's roots are a pagan festival, eventually adopted by christianity into a holy day to celebrate the coming of there lord.
See? Telephone game in action.

Well, the fat guy came when the church mixed Christmas with the Winter Solstice to convert more Druids. There WAS a Saint Nicholas, he would carve wooden toys all year and give them to the children. And he did have a reindeer-driven sleigh. Not 8 of course, but there were reindeer.
The bunnies are a symbol of fertility and came when the church usurped Spring Equinox for the same reason.
That being said, I love Carlos Mencia's explanation;
"Jesus is coming!"
"Jesus is coming? HIDE THE EGGS!"
"What?!"
"We'll make him think the rabbits are laying eggs, he'll leave the chickens alone."

Its not originally about Jesus, it was a pagan holiday. the pagan goddess of fertility and spring, Eostre. She was often seen holding a pet rabbit/ could transform into a rabbit. Said rabbit would lay eggs to amuse children. Easter conveniently fell on her day of celebration. Huzzuh.
first DAWWWWWWWW needs more sugar meds now

"The Easter bunny has its origin in pre-Christian fertility lore. The Hare and the Rabbit were the most fertile animals known and they served as symbols of the new life during the Spring season.
The bunny as an Easter symbol seems to have it's origins in Germany, where it was first mentioned in German writings in the 1500s. The first edible Easter bunnies were made in Germany during the early 1800s. And were made of pastry and sugar
The Easter bunny was introduced to American folklore by the German settlers who arrived in the Pennsylvania Dutch country during the 1700s. The arrival of the "Oschter Haws" was considered "childhood's greatest pleasure" next to a visit from Christ-Kindel on Christmas Eve. The children believed that if they were good the "Oschter Haws" would lay a nest of colored eggs.
The children would build their nest in a secluded place in the home, the barn or the garden. Boys would use their caps and girls their bonnets to make the nests . The use of elaborate Easter baskets would come later as the tradition of the Easter bunny spread through out the country."

Easter is actually a pagan holiday with a christian idea sorta injected into it since the events occur pretty close together. Rabbits and baby chickens were there first.

....Mebbe when Jesus was resurrected, his aura was so pure it caused bunnies and chicks to be born early, and they all swarmed him and lurved him and made him say 'awwwwwwwwwwwww' so he tought to himself '2000 years from now, if they ever make a holiday out of this, I declare the theme be bunnies and chicks, and people will look for eggs to color all funky-like and mess with hippies' heads when they're high,' but then all the hippies vanished and we still color eggs because our grandparents who fought in Vietnam say we have to just in case any hippies come back 'cuz they will and when they do we'll throw the colored eggs at them and they'll say 'Far out, that egg is crazy-trippy man' and lalalala.... *floats away*
