Dragons like showing off till they run out of steam. Then you see their real skills shine through as they switch to saving energy and calming their fire down. Even so... they are not any less dangerous than when they were overflowing with joy when they were showing off before. If they are bent on killing something. They WILL. In some cases. Them calming down, makes them even more dangerous
If its a friendly fight between two dragons its mostly having fun. They would stop fighting when they are tired and accept defeat because its their friend. If its a real enemy they wont quit and their dragon like durability shows itself as they get creative and get serious. They may only briefly slow down so they dont burn themselves out but if they are let to catch their breath and your their enemy. They will get back up from the craters you put them into and keep going.
