The "salad" of the day. The vinaigrette for the cucumbers, red onion, and ginger is pretty good by itself.

Grilled Cod w/ Cucumbers & Ginger
2 cups Cucumber, thinly sliced (~1/8 inch)
1 cup Red onion, thinly sliced
2 tsp Salt
3 Tbsp Ginger (pickled, fresh, or crystallized), minced
1 Tbsp Rice wine vinegar
3 Tbsp Green onion tops
3 Tbsp Vegetable oil
4, 4 oz Cod fillets, boneless, skinless
1. Combine cucumber and red onion with salt, let stand for ~15 to draw out liquid, drain.
2. Combine cucumbers and red onion with ginger, vinegar, green onion, and 2 Tbsp of oil, toss to coat.
3.Brush fillets with oil, grill to doneness (we actually baked ours for this recipe at 350F for ~ 10 minutes)
4. Serve cod over bed of cucumber and red onion salad.
