Cheesecake from the kitchens of
Chrismukkah to tempt and delight in.
As promised to
cheesecakelovers
On a side note- you can either do this with the regular graham cracker crust, or chocolate grahams...either way is tasty :3
This is also known as "Little Mickey's Favorite Cheesecake" on www.allrecipes.com submitted by Scott Payer :3
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup finely chopped peanuts
3/4 teaspoon cinnamon
3/4 cup butter, melted (you dont need this much folks, go with 1/2 to 1/3)
3 (8 oz.) packages of cream cheese (I used the low fat Neufchatel)
3/4 cup peanut butter (I used 1/4 cup actually)
1 cup white sugar
1 package mini Reeses peanut butter cups, crushed
2 tablespoons all purpose flour
1 teaspoon vanilla extract
2 eggs
1 egg yolk
1/4 cup half-and-half cream
2 cups semisweet choco chips (1 is fine if you use the peanut cups as I did)
Directions:
1.) Preheat oven to 375 degrees F. Line the outside of a 9 inch springform pan with aluminum foil.
2.) For crust: In a medium bowl, combine graham cracker crumbs, peanuts, and cinnamon. Stir in butter. Press the mixture onto the bottom and sides of an ungreased pan (for me, I greased mine, it comes out much cleaner)
and set aside.
3.) For filling: In a large mixing bowl, beat cream cheese, peanut butter, sugar, flour, and vanilla and beat until smooth. Add eggs and egg yolk all at once, beating on low speed until combined. Add in the broken up cups.
Stir in half and half and the choco chips...
4.) Pour batter into the springform pan. Then place the small pan into a larger baking pan, pour boiling water onto the sides until it comes 1/2 way up the sides of the springform pan. Bake in the preheated oven for 40 to 50 minutes.
~ This is a step that I skipped *facedesks* which is why it doesnt quite have the right kind of consistency in tasting...so please note...
DONT SKIP THIS STEP XD
Let cake cool completely (best bet is to leave the oven door open) when you have it off, and leave it for about 10 minutes, then let it chill in the fridge overnight :3
Then serve and enjoy *nom nom nom*
