This is a pretty recipe that I've been doing for many years, and there are plenty of variations you can do with this as well!
https://www.allrecipes.com/recipe/8.....d-chicken-iii/
Ingredients
1 (2 to 3 pound) whole chicken, cut into pieces
1 cup dried bread crumbs
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried thyme
½ teaspoon paprika
2 large eggs, mixed in a bowl
Directions
Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
In a medium bowl or gallon size resealable plastic bag, mix together the bread crumbs, garlic powder, salt, pepper, thyme and paprika.
Step 3
Coat the chicken pieces with the egg. Place chicken pieces in bowl/bag with bread crumb mixture and coat/shake until well coated. Place chicken pieces in a lightly greased 9x13 inch baking dish and bake for 45 minutes to an hour or until juices run clear. (I would recommend at the halfway mark of cooking, turn the chicken over so that all sides cook evenly. Also, use tin foil sprayed with PAM or some other nonstick spray on your baking sheet, that will save you a lot of agony.)
~ Now as for the other variations - cripes, theres a million other ways you can go with this recipe -
* Use gluten free breadcrumbs if gluten intolerant
* Mix your crumbs with 1/2 packet of dried Ranch dressing, or onion soup, or parmesan + romano cheese
* Use potato chips, broken up corn flakes or crunchy pretzels (preferably without salt) for a crunchier texture
* brine your chicken 8-10 before hand in buttermilk, or pickle juice (yes, it works!) or even Franks hot sauce if going for the "Nashville Hot Chicken" route
* I have yet to try a dry rub and then add on the crunchy topping, but I see no reason why it wouldnt work :B
Enjoy and good the next day cold or hot!
