Alfredo pasta sounds tasty, but can be rich and heavy despite its taste. A lighter alternative would be ricotta cheese, spinach, garlic, and lemon juice. You still have flavor without the heavy richness. Here are the ingredients used:
Spaghetti Noodles
Spinach (can be frozen)
Ricotta Cheese
Minced Garlic
Lemon Juice
1. Boil spaghetti before draining.
2. Prepare pan by heating first.
3. Once pan is hot, add ricotta cheese, minced garlic, and spinach, before mixing.
4. Add boiled spaghetti noodles to mix in with the ricotta cheese mix.
5. Add some lemon juice onto spaghetti before mixing more.
6. Enjoy!
It's really not too complicated and it's a much lighter alternative to alfredo pasta.
From Chris: As a side note, there are a few things:
~ You do not want to throw in the garlic into the ricotta as is. If you sauté' the spinach ahead of time with the garlic, however, you're good. The other way to take out the harshness is to microwave (or boil) the cloves. Microwaving - 1 minute at most; boiling - 2 to 3 minutes. Of course, you could also -roast- the garlic as well, which would give this a whole different flavor profile.
~ Chuong mentions to use lemon juice, but don't forget you can also get a -lot- of flavor from the zest of the lemon skin as well!
~ If counting calories, you can use low fat ricotta or even cottage cheese (just use your blender to take out the extra 'lumps')
