6 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness (used 3)
6 string cheese sticks (used shredded fontina)
6 slices ham (used 3 thin rosemary ham slices)
½ cup butter, melted

Easy Baked Chicken Cordon Bleu
Easy recipe that tastes like you cooked all day. Chicken breasts are wrapped around ham and mozzarella cheese for a change in this version of the classic baked dish.
Step 1
Preheat the oven to 350 degrees F (175 degrees C).
Step 2
Lay out the pounded chicken breasts on a clean surface. Place a slice of ham on each piece, then one stick of cheese. Roll the chicken up around the cheese and ham, and secure with toothpicks. Dip each roll in melted butter, then roll in bread crumbs. Place in a shallow baking dish. (preferably greased with non stick spray)
Step 3
Bake for 40 minutes in the preheated oven, or until chicken is browned and juices run clear.
~ When serving make sure to take out the toothpicks from said chicken :B

As for the squash, you can use any kind (Im a big fan of butternut) - just peel off the skin...save the seeds for snacking...cut open and drizzle some olive oil on the squash, and roast in your oven at 375 F for at least 45 minutes on a decent cookie sheet covered in foil - then let cool, scoop it out and puree in a blender, then serve with 1 tsp sugar, 1/2 tsp allspice and a knob of butter!
